I adore red wine and I enjoy it even more when I have some snack aside. These marinated olives are an absolute lifesaver when it comes to the unexpected guests passing by for a visit. Does it happen to you too that they simply pop in? And then the first thing that comes to your mind is “do I have anything to offer?”
I usually keep my larder filled with some extras, especially when it comes to the food that has longer expiration. The black olives is a must there! Not only that I use them much in my kitchen. I love them as a snack, too! I prefer the black pitted olives yet I the unpitted ones are so much richer in flavor! To make these marinated olives I used the pitted ones, however you may use any. Oh, and note that any olive type works including the green olives.
The taste of these marinated olives is absolutely stronger if you let them sit for some time. Nevertheless, they are still great for a quick appetizer. If you know you are about to have friends at home, I highly recommend to get the marinated olives ready at least a day before. Otherwise, if you need something quick to serve, here is the best option!
The marinated olives can actually be marinated in many ways. This combination is both sweet, salty and sour flavor in one dish. I have used fresh honey that made the flavor even stronger. I am pretty sure they would be super delicious baked in the oven, I will give it a try and let you know! In any case, this is one of my favorite best Italian recipes!

- Pour off the brine of black olives
- Chop the rosemary and mince the garlic
- Mix together honey and balsamic vinegar, add the garlic and rosemary
- Pour the mix on black olives and mix well so that all the black olives get covered with the mix
- If possible, let the olives sit for some time so that you get the best marinated olives ever!
