Anyone who does not like potatoes? Who?! Naaaaa, this is not possible! Potato is the most common vegetable in Lithuania, and it is even the first solid foods given to babies. Not sure I got too much or too few, but I adore potatoes, and could eat them every single day. And if it is about the duchess potatoes, then give it to me for breakfast, too. No jokes.
The list of dishes you can make out of potatoes is endless. If I had to say which potato dish is my favorite, I would be in trouble as there are soooo many. No doubt that the duchess potatoes is absolutely on top of that list, not only for the flavor but for the instant that it takes to make them.
Soft inside and crunchy outside, this is what duchess potatoes are! The duchess potatoes are so easy to make, and look amazingly as side dish with meat or fish. A fancy meringue shape potatoes will definitely be attention winners on any table. Can you imagine eating them as a snack? Oh ok, I thought I am not the only one lol
Preparing the duchess potatoes may seem time consuming, but this is not so true. All you need to do is to boil the potatoes, and mix the purée with other ingredients (follow some more detailed instructions below). If you have kids, call them to make the potatoes together, especially when it comes to the icing pipe. You will see how side dish preparation can become a fun time with your kids!
No worries, if you do not have the icing bag, you can still make the duchess potatoes. You can use the ziploc bag or any plastic bag you have, just cut the corner and you are done. In case you don’t have any of these either, simply take a scoop with the spoon, and you are good to go. At the end of the day, it is the flavor that matters, agree? 🙂

- Preheat the oven to 200°C (400F)
- Chop the potatoes into small pieces, place in a large sauce pot, pour the water on, add salt and bring to boil
- When the potatoes are cooked, set them aside to cool down and dry a little, then mash them well
- Place the pot back over medium heat, add cheese, heavy cream, pepper and nutmeg and let it simmer for a couple of minutes, then pour it into the mashed potatoes
- When mashed until smooth, add egg yolks and combine well
- Put some of the purée into the icing bag and pipe it directly onto the parchment paper
- Brush the duchess potatoes with butter
- Bake for 25-30 or until golden
Notes
- you can make the duchess potatoes without the icing bag: simply use a spoon or ice-cream scoop
- place the potato purée knolls keeping some space in between so they don't touch each other as they cook
- you can add potato spices to the purée (my favorite!)
