I love baking, and I love easy and quick to make recipes. I had some coconut and was not sure where to use it. Until I came up with this idea to use it to make cookies! I am sure there can be lots of variations when it comes to these coconut cookies. You may add nuts, even jam! I love the cookies the way they are as the recipe is so simple, and the cookies turn so chewy and delicious!
Oh and what I like about these coconut cookies as well is that they are not too sweet. You know when you get the perfect match of sweetness and a bit of salt in one bite? Here they are! I can definitly eat more than one cookie, and because I love coconut, I could keep eating them during throughout the day 🙂
I would consider this recipe one of the healthy recipes as well, because it is only the coconut that you add in. No flour, so they are also gluten-free cookies!
I suggest you to keep the dough in a fridge for some time before making the dough balls. I am usually in a rush, so do not always respect this rule, but try it and you will feel the difference!

- Preheat the oven to 320F
- Beat the eggs with sugar
- Add salt and vanilla essence, mix well
- Add coconut flakes (and poppy seeds if you use them!), mix well
- Bake for 25-30min
