I consider this oven roasted eggplant / eggplant mozzarella tomato bake as a main course. What is interesting is that for some people it is a side dish! I find it quite filling so could hardly imagine some other food aside. In any case, main course or side dish, this bake is amazingly good!
Duchess Potatoes
Soft inside and crunchy outside, this is what duchess potatoes are! The duchess potatoes are so easy to make, and look amazingly as side dish with meat or fish. A fancy meringue shape potatoes will definitely be attention winners on any table. Can you imagine eating them as a snack? Oh ok, I thought I am not the only one lol
Broccoli Salad
This broccoli salad is extremely easy to make. I would highly advise to leave it in fridge for at least an hour before serving as it helps the broccoli to absorb the flavors. I you have a chance to choose the type of mayonnaise, I would go for the one that is stronger in flavor, and more acid than sweet.
French Onion Soup
To be honest, I didn’t expect the French onion soup to be made mostly out of onions. I knew there was a lot, but I really thought there were a lot more ingredients. The chicken and beef broths make the soup even more gooey, especially if you make the broths yourself (I usually buy them).
Broccoli and Cheese Soup

The curd is not quite so common in Italy though. Once I was craving for donuts, and had to figure out how to replace the ingredient that does not exist in Italy. The MAIN ingredient! So after a few attempts, I decided to replace the curd with the ricotta cheese and curd cheese (nope, it is not the same as curd). The homemade donuts turned out amazing! Isn’t it lovely when you can make one of your favorite sweets abroad not having the main ingredient? It DOES make one happy, trust me 🙂

I am a (very) beginner-level expert of mushrooms. Everytime we go picking them (this happens quite rarely though), I always go for the chanterelles or boletus (even better known as porcini). When it comes to the mushroom puff pastry, you can use any type of mushrooms you have. The easiest is of course champignons that can be found at any grocery store. Easy, isn’t it?
