What cake texture do you prefer: dry or moist? Not sure this is a matter of different generations, but my Grandma loves dry cakes over moist ones. AND she knows well that if I had to choose one, I would only go for the moist ones! This apple mascarpone cake is really moist, even if you like dry texture cakes more, read further and I am sure you will discover something new!
This apple mascarpone cake is a two-bowl cake. I call it those cakes where you have to mix dry ingredients in one bowl and wet in another, and combine them both at the end. In any case, it is a very easy and quick-to-make cake, and there is nothing better than a delicious cake ready in a moment.
The apple mascarpone cake is sooooo moist and so delicious. What makes it so special? It is the mascarpone cheese. Really GENIUS! There is one thing I A-D-O-R-E about this cake: you do not necessarily have to have apples. No worries if you don’t, you can use the same base yet with other ingredient such as pears or berries, or even chocolate chips. Would you believe me if I said that the apple option is the best?
Although the mascarpone cake can be made with different ingredients (so in my case it is the apple mascarpone cake), the one with apples is my favorite. Apples give additional moisture to the cake which I love. The mix of apples, mascarpone, and the cinnamon is heavinly! I can’t describe the smell in the kitchen from the moment the cake goes into the oven to bake.
There is one funny thing that just came to mind as I type… Weird to confess but this cake with mascarpone is definitely my winner when it comes to “tasting” the batter directly from the spatula. Oh some more batter; wait wait, let me give this batter another try before it goes to the oven – it is really SO good that if I didn’t have oven, I would eat the batter only lol

- Preheat the oven to 180°C (350F)
- In a medium bowl, combine the dry ingredients: flour, baking powder, salt, cinnamon
- Peel the apples and cut them into cubes or any other shape you like
- In another bowl, beat the butter with sugar and mascarpone (make sure to beat well, for a couple of minutes)
- Beat in the eggs, one at a time, then add in vanilla extract and give it another mix
- Combine the two mixtures until smooth
- Bake for 45-50 minutes or until well cooked
Notes
- if you don't have apples, you can replace them with any other ingredient: pears, chocolate chips, or even berries
- cut the apples into cubes or any other shape; you can slice them and place them in your baking dish first, then cover with the batter
- if you use metal baking dish, you may want to grease the sides with some butter and breadcrumbs before pouring in the batter (I use silicone baking dishes, so I don't need it)
